Water boils at 212 degrees, after your producing steam, this steam, if the burner is left on high will increase the pressure inside the pan to a level strong enough to overcome the weight of the pan, this will “lift’ the lid allowing steam/energy to escape, Steam coming out of from under your lid is wasted energy, doubly so in the summer months.
